PIF Cardoncello Mushroom

Project objectives

Evaluation of the cardoncello mushroom from Apulia through the transfer of technology and processes across the entire supply chain. 

Specific objectives:

  • Define the shelf life of the mushroom through innovative monitoring processes.
  • Identify the most appropriate conservation techniques to preserve the nutritional value and organoleptic characteristics of the mushroom.
  • Define the antioxidant potency of the mushroom.
