The two-year Level II university Master's degree in "Applied Nutrition, Food Safety and Quality" is organized jointly byUniversità Campus Bio-Medico di Roma, by the University of Roma Tre, by the University of Tuscia and by the University of Rome Tor Vergata, with the National Order of Biologists (ONB) and in collaboration with the College of Biologists of Italian Universities (CBUI ).

Purpose

The evolution of knowledge in the food and nutrition field and the growing awareness of consumers require ever greater integrated knowledge on all aspects relating to human nutrition, from the farm to the fork, from food safety and quality certification to nutrition in physiological and pathological conditions. In particular, in the agri-food and nutraceutical production sector, a highly qualified professional figure is required capable of:

  • certify the quality, safety and nutritional value of food products
  • assist companies in enhancing their products (trademarks and denominations of protection consortia, product certifications, opening of new markets, etc.)
  • control the entire food preparation chain, from their purchase to their administration in the field of collective catering
  • carry out educational, consultancy and nutritional counseling activities to help consumers improve their eating style, even in particular physiological or pathological conditions.

Recipients and access requirements

For admission to the Master, a five-year/specialist/master's degree in Biology or another five-year/specialist/master's degree among those recognized for enrollment in the ONB is required, provided that you have at least 60 credits in SSD/BIO. Graduates in other disciplines may also be admitted, subject to evaluation by the Academic Board of the Master, where the training curriculum or work experience are congruous with respect to the aims of the course.

Educational objectives

Specific training objectives of the Master are:

  • basic knowledge of chemistry, biochemistry and food microbiology
  • knowledge of technologies for the evaluation of food safety, quality and nutritional aspects
  • advanced knowledge in the field of nutritional security and food safety applied to mass catering
  • advanced knowledge on the subject of quality and product certification in agri-food companies, marketing and economics of food products
  • knowledge of legislation and international and European standards for the management of hygiene, safety and quality and nutritional characteristics of foods, within the framework of a management system for continuous performance improvement
  • advanced knowledge of human nutrition in physiological conditions, in established physio-pathological conditions
  • advanced knowledge to apply the methods for assessing the state of nutrition and determining optimal individual diets and for collective catering.

Didactic structure

The training course lasts 16 months and guarantees the acquisition of 120 credits. It is divided into 4 main areas: Nutrition, Food Safety, Mass Catering, Food Quality.

Frequency

The teaching activities will take place at the headquarters of the National Order of Biologists and at the headquarters of the partner universities. The laboratories will take place at the premises of the partner universities. Lessons will be held almost exclusively every other week on the following days and times:

  • Thursday 09:00 am - 06:00 pm
  • Friday 09:00 am - 06:00 pm
  • Saturday 09: 00 - 13: 00

Teaching methodology

In addition to the frontal teaching, consisting of lectures and seminars, a series of practical or laboratory exercises are foreseen aimed at applying the theoretical and practical knowledge acquired during the Master's.  

Scholarships covering

INPS provides 5 scholarships for participation in the master. The scholarships are reserved for children or orphans of employees or pensioners enrolled in the Unitary Management of credit and social services or pensioners who use the Public Employees Management. More information here.

Title awarded

Joint Master's Degree in "Applied Nutrition, Food Safety and Quality". Recognition of training credits is linked to both regular attendance (compulsory for a total of hours of no less than 80% of the lessons and 100% of the traineeship activities) and passing the ongoing and final tests.

CME credit exemption: Decision of the CNFC of 17 July 2013 on the subject of "Exemptions, Waivers, Individual Tutoring, Training Abroad, Self-learning, Registration Methods and Certification".

Method of admission

The application for admission to the Master must be submitted by 9 December 2017 using the online procedure and requires the insertion of:

  • personal data
  • resume
  • dichiarasubstitutive certification
  • payment of the admission fee of €50

The selection will be made through curricular evaluation and oral interviews which will take place on 13 December 2017 at the headquarters of theUniversità Campus Bio-Medico di Roma. Admission to the Master will be communicated directly via email by the Master's teaching and organizational coordination.

Registration and payment

Having read the admission, enrollment in the Master must be completed by 20 December 2017. Failure to enroll within this deadline will be considered as withdrawal. Enrollment is considered completed by sending the enrollment form provided by the coordination to the Post-Graduate Training Service, together with a copy of the bank transfer certifying payment of the st installment.

Attendance fee

The enrollment fee for the entire course of the Master is € 6.000,00 to be divided into the following 4 installments:

  • €1.500,00 upon enrollment (December 20, 2017)
  • €1.500,00 by 30 April 2018
  • €1.500,00 by 31 November 2018
  • €1.500,00 by 30 April 2019

In no case will the fees be refunded. Enrollment in a university master's degree is incompatible with simultaneous enrollment in another course of study (first degree courses, specialist degree courses, university diplomas, direct schools for special purposes, specialization schools, research doctorates and university masters).

Discounted rates and scholarships

Discounted rates are available for candidates who have obtained the degree required for participation in the Master's program at one of the partner universities. The amount of each installment is, in this case, €1.000,00 each. instead of €1.500,00 each. Partial coverage scholarships are also provided, assigned according to the ranking drawn up during the selection phase.
