Project objectivesDevelopment and testing of a measurement methodology for characterizing the biochemical/organoleptic properties of Bassiano ham using instruments and procedures capable of analyzing complex gas mixtures using sensory modalities similar to those of natural smell (e.g., electronic nose) and molecules indicative of product quality. This study also takes into account the influence of the terroir of the production area. |
