Evaluation of the presence of toxic and persistent environmental contaminants of priority interest in fish products from the Mediterranean Sea

Project objectives

The environment of food production sites strongly influences not only the quality of the same, but also their safety. It is known that, in recent years, the presence of some environmental contaminants in food has become a priority for public health, strengthening the link between the environment and health. The Mediterranean Sea, which tends to be closed and with a reduced exchange of sea water coming essentially from the Atlantic Ocean, would seem to be more exposed to the chemical risk for the organisms present in it and, this reason suggests that this implies a significant increase in the of residence of chemical contaminants as well as favoring their accumulation in the various types of fish stocks. In CAP-fish adequate analytical methods will be developed for the correct identification and quantification of these substances even at very low concentrations, deepening how the mechanisms of transfer of contaminants from the marine environment to the various fish species operate.
