Isolation and characterization of bioactive molecules for the formulation of nutraceuticals

 

Project objectives

The objectives of the project concern the isolation and structural characterization of bioactive primary and secondary metabolites from food matrices and the development of innovative analytical methods for their quantification and extraction. The project will also aim to evaluate some health and/or therapeutic characteristics of the characterized molecules.

Specific objective of the Unit UCBM concerned: the selection and characterization of substances of nutraceutical interest, the analysis of their biological activity in particular antioxidant and anti-inflammatory.
