VITEVITA Project - Valorisation of wine company waste through the recovery of active ingredients and development of formulations for antimicrobial, nutraceutical and food products, with a view to the circular economy (GeCoWEB - Lazio Innova)

Project objectives

The project aims to produce extracts rich in bioactive compounds obtained from unfermented pomace and pruning waste from wineries in the Lazio region. The extracts will be evaluated for antimicrobial, preservative and antioxidant activity and will be tested on human erythrocytes and Caco-2 intestinal cells, to evaluate the protective capacity from damage caused by exposure to ionizing radiation and for damage induced by radiological treatments at radio-diagnostic or radiotherapeutic purpose. We will arrive at the design of a prototype in capsules to be used as a food supplement and a prototype in powder to be used as an additive for the preservation of sausages. In the preparation of the formulations, priority will be given to catechins and proanthocyanidins, simple phenols such as resveratrol and its oligomers (viniferins), for which there is already literature data demonstrating absorption and bioavailability.
