Enhancement and characterization of olive oils and protodiet analysis of the GAL Colline Joniche district

Project objectives

The main objectives of the project are:

  1. Study of the typical diet of the area to highlight its structure and peculiarities, as well as identify the changes introduced over time. The identification of these aspects will make it possible to better characterize the area, providing the starting point for historical investigations up to the protodiet of the place, and to enhance its typical products, especially the less known and widely used ones, identifying their nutritional value, especially in terms of micronutrients and/or nutraceutical/functional components

  2. Characterization of monovarietal oils and different blends in terms of volatile organic compounds and antioxidant power with subsequent analysis of the shelf life.
