Purpose
Specific objectives of the Master are:
- basic knowledge of chemistry, biochemistry and food microbiology
- knowledge of technologies for the evaluation of food safety, quality and nutritional aspects
- advanced knowledge in the field of nutritional security and food safety applied to mass catering
- advanced knowledge in the field of Quality and Product Certification in Agri-Food Companies, marketing and economics of food products
- knowledge of legislation and international and European standards for the management of hygiene, safety and quality and nutritional characteristics of foods, within the framework of a management system for continuous performance improvement
- advanced knowledge of human nutrition in physiological conditions, in established physio-pathological conditions
- advanced knowledge to apply the methods for assessing the state of nutrition and determining optimal individual diets and for collective catering.
Recipients and output profile
For admission to the Master it is necessary to hold:
- Five-year/Specialist/Master's Degree in Biology
- Another five-year/specialist/master's degree among those recognized for enrollment in the ONB, as long as with at least 60 credits in SSD "BIO".
Graduates in other disciplines may also be admitted, after evaluation by the Academic Board of the Master, where the training curriculum or work experience are congruous with respect to the aims of the course.
All those who obtain the title of Master can be included in a special list established by the National Order of Biologists, accessible from its official website and provided at the request of interested organizations and companies.
Teaching structure and internship activities
The Master is structured in 4 thematic areas lasting six months which include integrated forms of theoretical activities, individual learning and field experiences:
- Nutrition
- Food safety
- Collective catering
- Quality and safety
Within the modules will be organized seminars and on the professional, deontological, organizational and fiscal aspects relating to the specific module. At the end of each thematic area the student will have to pass an assessment test. Passing these tests will allow access to the final test.
In addition to the frontal teaching, consisting of lectures and seminars, a series of practiseor laboratory, aimed at applying the theoretical and practical knowledge acquired during the Master. The laboratories will take place during some weeks of the course on Saturdays.
The activities of training they will take place, subject to the stipulation of a specific agreement, at companies in the agri-food sector, collective catering and professional studios. Within 6 months from the start of the Master, the internship locations where the participants can carry out this activity will be identified.
Headquarters
The teaching activities will take place at the headquarters of the National Order of Biologists and at the locations of the partner universities. The workshops will take place at the premises of the partner universities. The administrative headquarters of the Master is set atUniversità Campus Bio-Medico di Roma, via Álvaro del Portillo, 21 - 00128 Rome.
Admission procedures and concessions
- The application for admission to the Master must be submitted by 13 April 2016 using the online procedure available at the website www.unicampus.it and requires the insertion of:
- personal data
- resume
- dichiarasubstitutive certification
- payment of the admission fee of €50,00
The selection will be made through curricular evaluation and motivational interview which will take place on 19 April 2016 at the Campus Bio-Medico University of Rome.
Both stages of evaluation are carried out by an Examining Commission specially set up by the Scientific Director together with the Scientific Coordination, with the collaboration of the Master's Scientific Committee. For the evaluation of the candidates, the Commission will have a maximum total score of 60 points available, divided as follows:
- evaluation of the scientific/professional study curriculum of each individual candidate: maximum attributable score 30/30
- motivational interview: maximum score 30/30.
The ranking of those admitted will be announced by 21 April 2016 by publishing the list on the website www.unicampus.it.
Registration and payment
Having read the admission, enrollment in the Master must be completed by 29 April 2016. Failure to enroll within this deadline will be considered as withdrawal. Enrollment is considered completed by sending the enrollment form provided by the coordination to the Post-Graduate Training Service, together with a copy of the bank transfer certifying payment of the st installment. All payments, including the one relating to the admission application, must be made to the bank current account in the name of:

Attendance fee
- The enrollment fee for the entire Master is € 6.000 to be divided into 4 installments:
- €1.500 upon enrollment (April 29, 2016)
- €1.500 by 22 October 2016
- €1.500 by 23 May 2017
- €1.500 by 22 January 2018
Specify the reason for each payment.
In no case will the fees be refunded. Enrollment in a University Master's is incompatible with simultaneous enrollment in another course of study (first cycle degree courses, specialist degree courses, university diplomas, direct schools for special purposes, specialization schools, research doctorates and university masters).
Discounted rates and scholarships
Are provided discounted rates for candidates who have obtained the Bachelor's degree required for participation in the Master's at one of the partner universities. The amount of each installment is, in this case, €1.000 each.
Furthermore, there are foreseen 4 scholarships partial coverage made available by the National Order of Biologists. The winners will be able to pay the participation fee in 2 installments of €1.500 each. by 29 April and 22 October 2016.

Final certificate
II level Joint Master's Degree in Applied Nutrition, Food Safety and Quality. Recognition of training credits is linked both to regular attendance (mandatory for a total of hours of no less than 80% of all planned activities), and to passing the ongoing and final tests.
