VIOLIN

Enhancement of Italian products deriving from the Olive through Innovative analytical techniques

Project objectives

VIOLIN aims to enhance the products deriving from the olive tree, both extra virgin olive oil and waste products, from which it is possible to extract compounds with high biological activity for the cosmetic, pharmaceutical and food supplement industries (nutraceuticals) . A chemical database will thus be built in which the compositional profile of each sample will be archived and correlated to specific properties: sensory, nutritional, botanical and geographical, nutraceutical, etc. VIOLIN has among its aims the creation of a culture of quality Italian oil. VIOLIN aims at a complete and detailed characterization of the PDOs under examination, in order to be able to provide stakeholders and control bodies with objective and reliable measuring tools (methods and analytical tools) to protect the excellent products of our country. VIOLIN aims to create an oil culture on the consumer, in order to create a purchasing awareness that economically supports quality productions. This will result in the economic advantage deriving from the reuse of by-products, which will be able to generate an induced activity in the olive oil chain through the creation of new jobs and investments for agronomic and technological innovations (spinoffs and newco).

VIOLIN expects to contribute to the formation of an oil culture and to support the development of the sector with a short-term intervention on the enhancement of quality.

I) definition of fingerprint for the characterization of the PDOs under examination;
II) description of a hedonistic profile of PDOs also in various culinary associations;
III) characterization of PDOs from the point of view of nutritional and nutraceutical properties;
IV) development of NEW methods of chemical analysis;
V) development of portable sensors;
VI) creation of a database on Italian PDOs;
VII) characterization of by-products, extraction and reuse of nutraceutical compounds.
