Direct experience for third year students of Food and Human Nutrition Sciences
June 30, 2017 - The academic year of the students ends outside the classrooms Degree in Food and Human Nutrition Sciences. They are those in the third year who, thanks to the teaching of Community nutrition, they had the opportunity to visit the canteen of the NATO Defense College located in the military city of Cecchignola in Rome.
A tour narrated by the student Giada Del Brusco who spoke of the enthusiasm "of being able to enter a protected environment such as the military one to touch first-hand the functioning of the distribution of meals within the institution". There, it is theBio-Refreshment company to serve meals in self-service mode, with a menu based on a choice of 5 first courses, 5 second courses and various side dishes. Furthermore, given the typology of the customer, the menus studied by the nutritionists are international in nature, precisely to respond to the different cultural needs.
From the kitchen where meals are prepared, to the warehouse where supplies are organized, up to the administration spaces, the students were able to delve deeper into the fundamental management and control choices that underlie this type of distribution. “Which – he explained Chiara Nuglio, nutritionist UCBM – are different from time to time depending on the structures, spaces and resources available”. Precisely for this reason it is important that i future professionals in the world of collective catering can come into contact with various types of company canteens, as explained in the workshop that concluded the visit to the NATO conference room.
